Minimal Effort Meals are my Favorite!

Often times I find myself cooking out of necessity.  Mainly for nutritional purposes and the need to please my growling stomach that grows distressingly more abrasive the longer I ignore it.  With that said, one-pot meals are often my go-to.  Most especially meals that can be made in the oven!  Isn't it great?  Having the ability to let the oven do the work you never wanted to do in the first place?  While you kick back and relax, or find anything better to do because eating wasn't really at the top of your agenda.

 

Real Life

We are all extremely busy and or lazy.  I fall under both categories depending on the day!  Come to think of it, cooking in an oven is almost just as good as using a dishwasher that will literally do your dirty work.  I don't have a dishwasher, so without many options, I choose the latter and go for easy oven meals.  Sheesh!  No-one told me adulting would be this hard.

Easy One Pot BBQ Chicken

Equipment

  • One Saute Pan

Ingredients
  

  • 2 each Chicken Thighs
  • 2 tsp Salt TT - To Taste
  • 1 tsp Black Pepper TT - To Taste
  • 2 tsp Granulated Onion TT - To Taste
  • 2 tsp Granulated Garlic TT - To Taste
  • 2 tsp Paprika TT - To Taste
  • 2 tbsp Olive oil
  • 1/2 cup Stock or Broth Veg or Chicken Flavor
  • 1/4 cup BBQ Sauce
  • 1 bunch Broccoli Cut
  • 1/4 cup Cherry Tomatoes
  • 2 tbsp Butter

Instructions
 

  • Heat saute pan or skillet with 2 tbsp olive oil
  • Season Chicken thighs and add them to hot pan, saute until carmelized and golden brown, flip chicken when ready
  • Deglaze pan with stock or broth, top chicken with bbq sauce
  • Add in broccoli and cherry tomatoes
  • Season veg with salt, pepper. Top veg with peices of butter
  • Bake at 350 degrees F for 30 minutes or until chicken is fully cooked. Internal temp should be 165 degrees F
